What better way to start the morning than with a healthy citrus breakfast? At Eskaton Village Carmichael, the monthly Chef’s Demo showcased citrus the superfood. Oranges, limes, lemons, grapefruits and kumquats were made into an array of delicious dishes for the 30 residents who attended the demonstration. The event, also recorded by the local PBS station KVIE, began by blending fresh orange juice, vanilla ice cream, ice and soda water to make a healthy smoothie that tasted similar to a nostalgic orange ice cream bar. The scent of caramelized sugar and tangerines filled the room as the chefs began crafting citrus topped crepes. Residents delved into the sweet and tart treat, awaiting the next one. In the meantime, baskets of citrus fruits were raffled off to residents. Finally, the chefs whipped up a serving of blood orange mousse that tickled the taste buds.
The residents were eager to ask the chefs for recipes and tips after the demonstration, and of course second helpings of the delicious food. With all the healthy choices and opportunities, it’s no wonder that residents living at Eskaton look happy. Healthy food is important to them, and once a month, they have the opportunity to see these dishes prepared. The food showcased is often available in the bistro and dining room, providing residents with a variety of meal options.
